Quelle salade !

“Quelle salade” (kel salad) literally means “what a salad” but figuratively means “what a pack of lies!” But it’s no lie that Balthazar Restaurant makes a fine quality salade Niçoise (knee swaz). This salad is a summertime favorite in the South of France and is named after the city of Nice. The recipe varies from town to town, but typically includes tuna, anchovies, hard-boiled egg, steamed green beans, tomatoes, and tiny boiled potatoes all served on a bed of lettuce and topped with a vinaigrette dressing. It was popularized in the United States by Julia Child.
